Wash and sort eggs for storage...
For many, the protective bloom on eggs meets their storage needs. Our practice is to wash eggs if they are soiled or are covered in debris.
To wash:
1. Use water that is 90-120°F; hot water pushes invading microbes away. 2. Wash with brush or soft cloth.
3. A simple, unscented detergent works as a sanitizer.
4. Set eggs aside to dry.
